Peanut Butter Mocha Energy Bites

Ingredients
- 1 cup old fashioned oats
- 1/4 cup flax meal
- 1 t. espresso powder
- 2 T. unsweetened cocoa powder
- 2 T. unsweetened shredded coconut
- Pinch of salt
- 1/2 t. vanilla extract
- 5 T. creamy peanut butter
- 1/4 cup pure maple syrup
Instructions
- In a large bowl combine all of the ingredients.
- Whisk or stir with a spatula until everything comes together.
- Cover and place the mixture in the fridge for 30 minutes to chill.
- Once chilled scoop out tablespoon sized portions and roll into a ball.
- Store the energy bites in an airtight container in the refrigerator for up to a week.
